We’re looking for a new Sushi Chef to join our All You Can Eat restaurant (buffet & banquet) at Corendon Amsterdam Schiphol Airport. This hotel opened its doors in Badhoevedorp in the spring of 2018 and consists of three wings: Plaza, Apartments, and Urban. Together, we offer 680 rooms, suites, studios, and apartments. The hotel also features multiple restaurants, bars, spa facilities, a swimming pool, cinema, and eleven multifunctional meeting rooms.

What does the job involve?
As our Sushi Chef, you are the specialist when it comes to creating fresh, high-quality sushi for our All You Can Eat buffet and banquet guests. You prepare sushi and sashimi with precision, ensure beautiful presentation, and keep consistency in both taste and quality.
Your role includes:
Preparing sushi, sashimi, and other Japanese-inspired dishes for our guests
Maintaining high standards of hygiene and food safety in your section
Managing mise-en-place so the buffet is always well-stocked and fresh
Training and guiding colleagues in sushi preparation techniques
Thinking along on improvements and new creations for our buffet offering
Keeping your workstation and equipment clean and well-organized
This is a hands-on role where passion for fresh ingredients, eye for detail, and speed in preparation go hand in hand.
Who are you?
You have at least 2 years of experience as a (Sushi) Chef in a hotel or buffet restaurant;
You have knowledge of buffet and banquet concepts;
You ensure compliance with safety regulations, occupational health and safety (ARBO), HACCP guidelines, and standards for work and presentation methods;
You actively participate in the daily kitchen operations;
You contribute to menu updates and the development of recipes, garnishes, etc.;
You make suggestions to the Head Chef based on daily practice and/or market trends, both regarding products/dishes and work processes.
